VEGAN CHICKPEA TUNA SALAD

Ingredients:

• One can of chickpeas, drained
• 3 ozs of whole kernel corn
• 1 small stick of chopped celery
• 1 oz chopped red onion
• 3 tbsp vegan mayonnaise
• 1 tsp Dijon mustard
• 1 tbsp capers
• 1 tsp garlic powder
• Fresh dill
• 1 tsp Nori flakes
• Squirt of fresh lemon

Instructions:

 

Add drained chickpeas to a bowl and mash well.

Add the corn, chopped celery, red onion, and seasoning. Add salt and pepper
to taste.

Add mustard and vegan mayonnaise to your desired consistency.

Place on a bed of fresh lettuce or on your favorite sandwich bread or wrap of choice If desired, garnish with a sweet pickle or add fresh dill sprig.
