Ingredients:
• 1½ cups all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon ground cinnamon
• ½ teaspoon baking soda
• ½ cup vegetable oil
• ½ cup white sugar
• ¼ (6 ounce) container soy yogurt
Instructions:
Preheat oven to 350 degrees F (175 degrees C).
Prepare a baking sheet by lining with a parchment sheet, or in the alternative,
you may prepare your baking sheet by lightly spraying a with vegan cooking
spray.
Sift flour, baking powder, cinnamon, and baking soda into a bowl and set
aside.
In a separate bowl, mix vegetable oil, sugar, and soy yogurt together.
Combine your flour mixture with your yogurt/oil/sugar mixture and stir
together until the cookie dough forms together.
Drop tablespoons sized cookie dough onto prepared baking sheet. Space
apart by 2 inches.
Bake in the preheated oven until golden, about 7 minutes.
