ZUCCHINI CHIPS

Ingredients:

•1 tablespoon grated lime zest
• 2 teaspoons lime juice
• 2 teaspoons smoked paprika
• 1 teaspoon Kosher salt
• ½ teaspoon ground black pepper
• 2 large zucchinis, thinly sliced

Instructions:

 

Preheat oven to 225 degrees F (110 degrees C).

Line a baking sheet with parchment paper.

Combine lime zest, lime juice, paprika, salt, and pepper in a bowl.

Place zucchini slices in a single layer on the prepared baking sheet.

Spray with vegan olive oil cooking spray and sprinkle lime mixture on top.

Bake in the preheated oven until golden and crispy.

This should take about 45 to 60 minutes.

Allow chips to fully cool.
